I try hard to be happy alone. To drown the thoughts of lovers, orgasms, and cuddling from my mind on lonely nights. To be content without the touch of another. To fill the spaces left from people who didn’t want me enough to stay. The silence is deafening when I wished for more, and they looked for an exit.

I still think of you every night before bed. As if the ghost of you would join me. But I realized it only brings me sadness. Instead I will sleep diagonal.

The most marvelous Protection Magic Maine Wild Blueberry Ricotta Cake <3

4 large eggs room temperature

2/3 cup granulated sugar

1/2 nice olive oil

15 oz ricotta cheese (about 2 cups)

1/4 cup sour cream (or European style yogurt)

1 tsp vanilla extract

1 cup all-purpose flour

1/2 tsp salt

2 tsp baking powder

1 Tbsp lemon zest from 1 large lemon (optional)

8 oz blueberries (1 1/2 cups) rinsed and dried (or frozen bc nothing matters. I used frozen. Sue me.)

1) Preheat oven to 350F. Grease and parchment line a 9” springform cake pan OR a 9” cast iron. In a bowl, add flour, salt, and baking powder. Whisk to combine.

2) Create your protection mantra. A sentence or a phrase, anything to help you focus your intentions. Think this mantra to yourself while you do the following: In a large bowl, whip the eggs and sugar together for a few minutes until it becomes large and fluffy. Add the olive oil and whisk that in. Then add your ricotta and sour cream (or yogurt) and whisk that in. Add vanilla and lemon zest (if using.)

3) In 3 portions, whisk in the flour mixture. Mix until JUST combined.

4) Pour the mix into your greased and parchment-lined pan. Enchant your blueberries 1 handful at a time and sprinkle them on top of the cake. When you have added an amount that you like, put the whole affair in the oven for 60-65 minutes. Do a toothpick/knife test to see if it’s done, and pull it out and let it rest in the pan for about 20 minutes. Then transfer it to a cooling rack to fully cool.

5) You can make a lemon glaze for this cake as a topping with powdered sugar and lemon juice if you want. I did not.
