I think this is the best curry I have ever made. So yummy and very healthy! Recipe... Add the following to your blender or mixer... 2 medium onions chopped Loads of garlic (maybe 5 or 6 cloves) Cashew nuts - two generous handfuls 1 to 2 table spoons of fenugreek seeds 2 teaspoons of chili powder 2 tea spoons of cumin seeds A large blob of tomato puree One cup of vegetable stock Then blend for a long time. It needs to be super smooth! Then get a wide shallowish sauce pan and put a little oil in (coconut oil is good or olive oil) Add a little bit of cumin powder and then add the mixture. Put at low heat. For the next 25 minutes continually stir and add water to keep not too think and not burn. Once the sauce becomes golden and the taste sweeter add the following... 1 chopped red pepper / capsicum Cubed paneer (Indian cheese) Keep stirring and adding more water for another 10 mins. Add roughly chopped coriander to taste. Cook another 2 mins Add 1 chopped tomato. A little cream if needed Serve with a little coriander on top. #cooking #recipe #indianfood #vegetarian #nutrition #food #healthy #wholefoods
