Grease Monkey's Schnitzel Sandwich

Just create a sandwich from the ingredients. I've decided to make a mango sauce but there are many great sauce recipes that fit with this sandwich.
Oil-Drizzled Steamed Fish
Trevally Fillet Garlic Rosemary Marjoram Oregano Olive Oil Vegetable Soup Lemon Butter
First peel the garlic cloves and slightly press them with the flat side of a blade to get to some of the juice. Put them into a cold pan with olive oil and a little bit of butter and leave them there so the oil can take some of the garlic’s taste.
Mix olive-oil, pressed garlic, Rosemary, Marjoram and Oregano to a marinade. Then ensure the trevally has no fish bones left inside. You can do so by gently stroking over it with a finger from tail to head. Like that you feel them the best and can remove them with a pincher.
Rub the marinade over the Fish and set it into a steamer filled with vegetable soup instead of water. Steam for 20-30 minutes, until the fish is cooked. You can use that time to prepare that sauce (see below). Be careful with removing the fish, it becomes very soft and easily breaks apart.
Preheat the pan with the oil-butter-garlic mix and use it to brown one side of the fish to add nice roasting flavour to it.
For the sauce press a lemon and set the juice aside. Carefully melt butter in a pan without letting it get brown. Add the lemon juice and taste it (best with some bread) until the flavour is to your liking.
Set the steamed and roasted fish onto a plate and pour the lemon-butter through a strainer onto the fish. Best enjoy with some cooked potatoes.
Multi-Meat Sandwich
•1 roll
•2 tbsp mayonnaise
•1 red onion
•1 tomato
•1 cucumber
•sliced ham
•salat
•salt
At first chop onion, tomato and cucumber into thin slices.
Half the roll.
Place all ingredients among the rolls. Add some salt to the mayonnaise if you like.
(I'm so sorry guys...I totally forgot the salad on the photo)
Prairie-Style Skewers
•400g skinless chicken breast
•170ml Teriyaki sauce
•3-4 wooden skewers
•oil
Cut the chicken into small pieces and marinate them in the Teriyaki sauce for at least 30 minutes. The longer you leave it in the marinade, the more intense the taste becomes.
Put the chicken on the skewers and heat oil in a pan (I took asian wok oil). Let the skewers fry for a while in the pan on low heat. Of course you can grill it instead. They should be crispy outside and well-done inside.
Spaghetti Carbonara
250ml double cream 100-200g small cut bacon 2 yolks 100g grated cheese (Parmesan) garlic butter Spaghetti
Note that the amount of Spaghetti and bacon can vary depending on how big the potion should be and how much bacon you want inside. Same goes for the garlic which can be used in small or big amount.
Start with cooking the noodles. The sauce won’t take long but will have to be mixed with the still warm noodles.
While they boil prepare the garlic by either pressing it or cutting it very small. Brown the bacon with some butter in a pan and add the garlic to it.
Mix the yolks, the double cream and the cheese in a bowl. Season with some salt and pepper, careful though as there is already enough salt in the cheese and the bacon you might not even want to add some to that.
Add the finished Spaghetti to the pan with the bacon and the garlic and pour the chees-cream-egg mix on top of it. Mix well and let it heat, but take care it doesn’t boil as the egg would curdle. Serve immediately.
Burly Bean Bowl
•1 tbsp oil
•1 large onion
•1 red pepper
•2 garlic cloves
•1 heaped tsp hot or mild chilli powder
•1 tsp paprika powder
•1 tsp ground cumin
•500g minced beef
•400g can chopped tomatoes
•½ tsp dried marjoram
•2 tbsp tomato purée
•200g can red kidney beans
•100g can white kidney beans
•100g can corn
Peel the onion and garlic. Chop them finely and fry in a large pan.
When they are golden brown, add the meat and the chopped pepper, stir, pour in the tomato purée and the canned tomatoes.
Season with chili and paprika powder, salt, pepper, cumin and marjoram and simmer for about 20 minutes.
Finally add corn and beans and cook for a short time. Season to taste.
Double breaded Wiener Schnitzel
eggs (amount depends on size of the meat and number of Schnitzel made) flour breadcrumbs thin meat schnitzel (preferably pork but chicken or turkey is also tasty)
Take the meat cutlets. If it is pork you can flatten them out with a meat mallet. Season the meat with a little salt and fine grinded pepper.
In preparation take a platter and put flour in it. Scramble the eggs in a second one and give the breadcrumbs into a third.
Now the meat is first pressed into the flour and then coated with the scrambled egg by dipping it inside. Press both sides of the meat into the crumbs until all of the egg is soaked up and everything sticks to the meat nicely. Repeat all three steps. Doing so makes the breading extra thick and crispy.
Brown it in clarified butter. If not available add a small piece of butter to some neutral tasting oil. Dry off residual oil with a kitchen roll. Enjoy with some potatoes or rice or put it into bread.
Mystery Meat Sushi
For the meat: 100g of breadcrumbs 1 egg 200g minced meat a good dash of soy sauce
Other: 250g sushi-rice rice-vingear sake or dry white wine cheese of choice (cut to slices) Nori-leaves (fried seaweed)
Add all ingredients for the meat into a bowl. Knead them with your hands until it has a nice even texture and colour.
Once the mixture is finished best use a form of sorts to make loafs. You can take a plastic food-box or something alike. Easiest way is to lay the form with cling film and add something of the meat-mix to it. Press it into the form so it is flat and even, then remove it alongside the film, The amount cooked will be enough to sate two people, depending on the size of your loafs the amount of Sushi received may vary. Note that the loafs and the rice will need to have an even form, which is why it is easier to do it this way. Once the meat is formed and possibly packed in foil you can let it rest like that for later use, freeze it for another time or continue with the recipe.
Cook the sushi-rice as instructed on the package but do add some Sake or dry white wine to the water. Give it time to cool while frying the meat loafs in a pan with some oil. Once finished put the meat on some sheets of kitchen roll to drain it from the remainders of the oil. Those too will need to cool until they are at least lukewarm or better yet room temperature.
Once the rice has cooled down it is seasoned with a dash of rice vinegar. Then form it equally to the meat within the same form. The cling film trick works with the rice just as well. With that, all preparations are complete.
Arrange the rice with some cheese on top and put the meat on it. Wrap it with a stripe of Nori (seaweed) and serve cold.
Topfenknödel (Curd cheese dumplings)
For the dumplings:
•320g Curd cheese (20% fat)
•60g Butter (melted)
•60g Breadcrumbs
•2 Eggs
•80g Semolina
•1 pinch Salt
•Lemonzest
For the sugared breadcrumbs:
•100g Butter
•2 tbsps Vanillasugar
•Sugar to taste
•100g breadcrumbs
•1 pinch Cinnamon powder
This dish is perfect as a main course or as a dessert!
Combine the melted butter and the white bread crumbes, then mix in the rest of the ingredients thoroughly.
Refrigerate for 2 hours. Form 12 large dumplings from the dough and simmer in lightly boiling water for 8 minutes. Remove from the pot and let drain on kitchen paper.
For the sugared breadcrumbs, melt butter in a large pan. Add the breadcrumbs, cinnamon, sugar and the vanillasugar and fry everything golden brown. Then add the dumplings.
Applesauce tastes best with the dumplings.
Veggie Medley Stew
•900ml vegetable broth
•Goats cream cheese
•1 white onion
•1-2 potatoes
•2 orange carrots
•2 yellow carrots
•Broccoli
•Mushrooms
•Bean sprouts
•1 Handful Cress
•Oil
•Salt and pepper
Of course you can change each vegetable for another!
Wash and cut the onions, carrots, broccoli and the potatoes. Sautè them for 4 minutes with 1-2 tablespoons of oil in a pot. Add in the broth and season with salt and pepper to taste (for more flavor add in more dried or fresh herbs as desired).
Bring to boil, then add bean sprouts and mushrooms.
Reduce heat to medium-low, cover and simmer until potatoes are tender, about 15 - 20 minutes.
Finally, intermix the goat's creme cheese. Garnish the medley with the cress and serve warm.
Pasta with creamy Gorgonzola Sauce
• Blue cheese
• Double cream
• Nutmeg
• Salt, pepper
For today we take a delicious recipe for pasta. For the sauce take blue cheese and cut it into pieces.
They don't have to look like much or be the same size, it's just for the cheese to melt quicker. Boil it in double-cream till it is a nice even sauce. Note that the ratio of cheese and cream might vary depending on how intense you prefer the sauce to be. Use nutmeg to season the sauce - mind not to take too much as the nutmeg has an intense taste. Garlic can be added to your liking. This sauce fits perfect for spaghetti or other pasta but it is also delicious with pork.
Croque Madame

• 1 slice of crusty bread
• 2 slices of ham
• Flavoursome cheese
• 1 egg
• Butter
• Oil
• Salt, pepper
First grate the cheese. Then put the bread slice in a toaster and toast it until your desired toastedness. Butter one side.
Place the bread with the buttered side facing up on a baking tray, sprinkle it with the cheese and add 2 slices of ham and bake in a hot oven at 200 degrees for ten minutes.
Meanwhile, heat oil in a nonstick pan and fry the egg for 3-4 minutes over medium heat. Make sure to keep the yolk intact!
Put the fried egg on the baked bread. Season with salt and pepper. Serve immediately.
Orange Cinnamon Panna Cotta
• 0.5l double cream
• 5 leaves of flavourless gelatine
• 40g sugar
• cinnamon, vanilla and orange zest
A traditional, easy, and delicious Italian dessert. Perfect for hot summer days instead of ice cream!
For the panna cotta, put the gelatine leaves in a small bowl of cold water to soften. This will take about 5 minutes. Meanwhile, pour the double cream and the sugar into a pan. Add the vanilla, the cinnamon and the orange zest. Heat gently until hot, but not bubbling. Remove the gelatine leaves from the water, squeeze out any excess liquid then add all leaves to the hot cream. Stir until completely dissolved. Bring to boil and let simmer for about 10-12 minutes.
Fill the mixture into 6 serving glasses (rinse the glasses first with cold water) then chill in the fridge for at least 4 hours. Orange sauce fits best with this Panna Cotta. Buon appetito!
Toasty Rice Balls
Wash the sushi rice until the water is clear. Cook it in double amount of water with a pinch of salt and a dash of sake (or white wine). Make sure that there is always enough water, otherwise the rice will scorch. It takes about 20 minutes until the rice is tender.
Then put it on a plate and mix it with the rice vinegar. How much vinegar you use is a matter of taste. If necessary add salt. Mould the rice into small triangles approximately 8 cm wide.
Use a nori sheet to wrap up your ball of rice. The Toasty Rice Balls are orginally served on a banana leaf. I took a palm leaf, because unfortunately I didn't have a banana leaf.
Flame-Roasted Toast
There are different ways to do this one. All are pretty simple, though their taste might vary. The tastiest way On the fire/grill: Take a slice of toast or other white bread and roast it over a coal-grill or a campfire until golden-brown and pleasantly crispy. The easiest way Preheat your stove on either grill or the highest level on top heat. Put the slice of bread inside and wait for it to turn golden.brown. The funniest way Use a small bunsen burner for the kitchen (usually used to caramelise sweets) to grill your bread until the desired color is reached.
