This years BC Barleywine. It is so much better than last year. Much more thick and rich (last years was thin as hell). Raisins, dried cherries, caramel sauce, coffee cream with oak and bourbon on the finish. Sample of my sour blonde ale fermented with 100% culture of Sante Adairius culture. Ugh, has that classic SARA funk and acid profile with tons of stone fruit. Now I know why West Ashley is such a fruit bomb; it's because the base beer already has a great fruit profile. Acid profile on the palate still needs some refining and softening: it's a tad harsh, but it is only 1.5 months old and hasn't seen oak yet.
