The stainless steel boxes are still novel enough to inspire me to pack my lunch. Today I brought TJ’s turkey meatballs + KBBQ glaze and rice with furikake. And some random veg + yuzu soy sauce dressing to fill out the rest of the compartments. It was fairly quick and easy to make with the help of my microwave (meaning I heated everything before I filled the box).
Natto salad donburi!
Boring, sadly… but will do in a pinch. I could see this being the side salad of some pasta lunch at an Italian restaurant.
I have to admit I saw the words “Asian” “chicken” and “salad” and immediately assumed this was a Chinese chicken salad (despite TJ’s already selling a Chinese chicken salad) but it has more of a southeast Asian vibe. The dressing is sweet and thin, like a spring roll dip. Actually this salad is just like a deconstructed spring roll. Will probably not buy again over actual spring rolls.
The dressing took about 10 seconds to grow on me but now I like it. Probably not for everyone tho. The crunch factor is pretty legit. Dressing + cranberries = moderate sweetness.
Not my favorite. Will probably not buy again. Hard-boiled eggs in pre-packaged salads are always too hard (and I get it.. just wish they didn't try it unless it's shredded) and the cheese in this didn't do anything for me. The dressing was just okay.
Zucchini and yellow squash zoodles + tomato pesto sauce (out of a jar, because laziness). Maybe it's just cuz it's a prepackaged sauce but I prefer regular green pesto. Is saying "zucchini zoodles" totally redundant?
I used a mold to get these onigirazu to turn out somewhat uniform in size (a bit pricy, $10 at Marukai, but some of us just find it hard to freestyle). Berkshire pork sausage + broccoli, and some grape tomatoes on the side. I also have a salad that is still in the fridge and that should take care of my carbs, protein, and veg!
BTW, the first time I used the mold, I tried to go without the cling wrap (because extra steps go against the lazy office lady code) but it really does help to moisten the nori and get it to stay wrapped around the onigirazu at the edges.
Two kinds of pasta salad from Vons deli. Regular pasta salad on the left (kinda boring), cavatappi caprese on the right (yum but too salty). I just added some garbanzo beans to the pasta salad and added extra macaroni to even out the saltiness of the cavatappi. I'm really enjoying this new deeper Lunchbots box too!
My Daiso haul. I think I’m most excited about the silicone corn dog mold. Yup, all you need is pancake batter, a hot dog, and a microwave. I also got the veggie steamer because I do a lot of my “cooking” with the microwave.
My bah humbug bento. Onigiri (rice balls) + tamagoyaki (fried egg) + umeboshi (salty pickled plum). And arugula. One bag of prepackaged arugula lasted me the whole week! (Though I did not partake everyday.) I need to figure out portions because this did not last me longer than 3 hours, even with my usual 🍎
Arugula + Parmesan cheese salad, broccoli, carrots, and grape tomatoes. Pickled garlic on the side, and I bought the chicken tortilla soup because I have zero soup skills. A Fuji apple for dessert 🍎
Why now?
I guess certain health concerns were the main reason why I’ve decided to start making my own lunches. I need to lower sodium and fat intake and up my fiber (quelle fucking drag!), which is quite difficult to do, especially the sodium part. I’m also not the best cook, nor do I always enjoy it, and I most certainly don’t have enough time for it! Which makes coming up with a different lunch every day kind of a bummer. But, I can appreciate the art of a beautiful bento, so I’d like to see if I can improve my moritsuke skills eventually. Maybe one day I can even work my way up to making a Rilakkuma chara-ben... But first, to make my way through the frozen and instant foods aisles!
Salad in a box. Took 17 minutes to boil the grains in a plastic bag. The only thing I added was some shredded chicken breast from a rotisserie chicken I’m working my way through. About 3g of fiber. Taste was… so-so. Will not repurchase.
Prepackaged salad-y stuff + baked pita chips and babaghanoush = ~12g fiber. Will add blackberries and 1 c of FiberOne cereal to +10g of fiber = 22g total.
