yes, another salmon dish.Â
Salmon from Costco, prepared how I have posted in previous but with 1/2 cup brown rice and pan seared bell peppers and spinach!Â
These are my brownies I make posted already in a previous post! Just a different design for my friend’s 22nd bday, these are her favorite!Â
Steak paired with cream sauce, roasted asparagus and cheesy garlic bread.Â
Sauce: 2 tbsp oil, 1 tbsp butter, garlic, flour, heavy cream, beef broth, black pepper, 1/2 cup parmesan and cheddar, 2oz cream cheese
how to make cheese sauce: In a medium saucepan, melt butter with oil. Add the garlic and saute for a minute or two. Add the flour and cook for about 1 more minute. Pour in the broth and heavy cream and bring to a slow boil and whisk until thickened. Whisk in the cream cheese, Parmesan and cheddar until smooth and creamy. Serve over chicken or steak.

This is my grandmas secret recipe so unfortunately I can not share this but they are delicious, paired with bacon and eggs!Â
Grilled cheese!!Â
Just a grilled cheese but with sausage, onion, mushrooms, and bell peppers!Â
(clearly it isn’t complete but wanted to show what is on the inside, put other piece of bread on top of this)Â
Healthy Italian sausage pasta: saute 1 sliced Italian sausage (I use chicken sausage from winco), 1 clove garlic, ½ cup chopped mushrooms, ½ cup chopped onion, ½ cup zucchini or another vegetable, add ½ cup spaghetti sauce (healthy tomato one no cream) to ¾ cup of whole wheat pasta. I usually add a little bit extra so I can have some for lunch the next day. It is a small portion but really good.Â
You can make this more creamy by using a cream sauce and cheeseÂ
Omelette!Â
Easy omelette with whatever ingredients you want to use!Â
I like to use: bell peppers, tomatoes, mushrooms, onion, spinach, some kind of meat (ham, chicken, or sausage), and cheese!Â
Beat all the eggs and season with salt, pepper, and I add cayenne. Heat over medium heat and put some butter down (1 tbls) let the eggs cook a little bit and then put ingredients on top, cook till you see not a lot of liquid egg left, then the hard part... the flip... flip it over cook for a few more seconds. Flip back over put cheese on one half and then fold in half onto plate!Â
This was my Thanksgiving leftover panini!Â
I think it is safe to assume the leftovers are gone but just in case you randomly have all Thanksgiving leftovers in your house here it is!Â
Sides: Green bean casserole, cranberry sauce and gravy in the white dish!Â
Panini: mashed potatoes, yams, turkey, cranberry sauce mixed w/ a little bit of mayo, lettuce and tomato! This was the best leftover meal I’ve ever had!Â
There are a ton of different ways to make this depending on what you have so mix and match!Â
Cajun chicken and brown rice: season chicken with Cajun seasoning plus whatever additional seasoning you want(I add paprika, garlic salt, cayenne). Saute garlic, ½ onion, 1 bell pepper, in 2 tsp olive oil. Add 2 tbls tomato paste. Add ¾ cup brown rice. Serve chicken on top of rice
Salad: this is the protein salad! plus or minus some ingredientsÂ
Use the same chicken or cook the chicken the same as the Cajun chicken, cook the brown rice – add in paprika, cumin, cayenne and pepper and mix to give the rice a cook (Can add additional rice spices to make Mexican rice), layer bowl with lettuce of choice, cut in half cherry tomatoes, chicken, corn, black beans, rice.
Protein salad and Breakfast toast
I just made my breakfast and my lunch for later!Â
Protein salad: spinach, turkey, tomato, carrot, broccoli, avocado, strawberry, 1 tbl balsamic dressing. I will also add a hardboiled egg to this for additional protein.Â
Toast: Whole wheat bread, avocado, tomato, scrambled egg.Â
Turkey Dinner:
I used some leftover turkey satueed in a pan with tomatoes, mushrooms, spinach. Side of broccoli, carrots and tomatoes.Â
Healthy, easy, yummy.Â
Fajitas or Taco night!Â
These are healthy and delicious!Â
Cook steak (same way as steak made in steak dinner post) 1 cup bell peppers (red, green or orange), 1/2 small onion and 1 tablespoon olive oil. Spread 1/2 cup refried beans on 2 whole wheat tortillas. Top with sauteed vegetables and cilantro. i also will add mushrooms, avocado and a little bit of cheese.Â
TIPS: these can be made many ways, vegan and vegetarian if needed!Â
I’ve decided to go on a bit of a health kick due to a cruise coming up so the next few recipes posted will be healthy and delicious meals!Â
Steak, greenbeans, and fruit.Â
Need: 3oz steak(size of a deck of cards), salt, pepper, 1 tbl olive oil, garlic, 1 tbl butter, few sprigs of thyme.Â
To cook the steak: salt and pepper the whole steak, place 1 tbl olive oil in a pan and let it heat up some on medium heat. Sear all sides of the steak then put in butter, garlic, thyme, baste the steak until cooked how you want it. Mine is medium rare.Â
Green beans: I think the string green beans are the best, I pan sear them in any of what is left over in the pan from the steak for a really great flavor plus I will add some more spice like cayenne for a little kick.Â
TIPS: When cooking steak I follow Gordon Ramsay’s instructions so if you want a video look that up! If you have a thinner steak like the one above you only have to pan sear to cook, if you have a thick steak you’ll need to follow instructions above and then cook in the over until you’ve reached desired temperature for how you want your steak prepared.Â
If you haven’t noticed I really enjoy elevating brownies. It’s sure to make everyone happy and takes basic brownies and makes them better. All I did for this was try and make a turtle type of brownie. Added peanuts, caramel and white chocolate chips that i mixed into the batter and also put on top.Â
This pasta is using the same ingredients as the breakfast scramble minus the eggs and bacon and adding angel hair and herb pasta from pastaroni (less than a dollar at winco)Â
Great way to elevate a simple boxed pasta. College mealÂ
PUMPKIN PATCH BROWNIES!Â
Even though October is over these were a huge hit and were gone very quickly. You could adjust this to be Christmas trees or whatever you want for whatever holiday.Â
I used costco brownie mix (the best) 2 pouches (follow instructions on box - if you use two pouches double the recipe) then i spread a mix of chocolate and vanilla frosting and crumbled Oreo cookies on top. After I melted white chocolate chips and put in green food coloring and squiggled around to make it look like vines. Added those sugar pumpkins on top and there you have it: pumpkin patch brownies. These are a chocolate smack in the face but in the best way.Â
TIPS: make sure brownies have cooled completely before putting frosting on or the frosting will melt and not have distinct layers. be patient.Â
