Had my very first pickled onion thanks to Cam, so I decided I'd make my own. Got everything I needed from Prahran market! Pretty excited! FERMENTED EVERYTHING! (at Prahran Market)

Extra Thick and Fluffy Japanese Style Pancakes
V E G A N I Z E D !
Ingredients
1 cup self raising flour
½ tsp baking powder
¼ cup sugar
1/3 cup applesauce
¾ Butter milk* ( to make up 1 cup with the applesauce)
1 tsp vanilla extract
1 tbsp Vegan mayonnaise*
Margarine, maple syrup, vegan ice-cream, etc. for toppings
*Vegan Butter milk
To substitute buttermilk, mix non-dairy milk with a foodie acid such as lemon juice, apple cider vinegar, or brown rice vinegar and let sit for 5-10 minutes. The general rule is to add 1 Tablespoon foodie acid to a 1 cup measuring cup, then add non-dairy milk and fill to the top. Beware that this works best with soy milk (organic), almond milk or oat milk – low-protein rice milk will not produce the same results.

*Vegan mayonnaise recipe:
1 cup soy milk or other nondairy milk
1 tablespoon apple cider vinegar or freshly squeezed lemon juice
1 teaspoon sea salt
1 ½ to 2 ½ cups canola or other neutral oil
Place the soy milk, vinegar, and salt in a blender and process briefly. With the blender running, add the oil in a very thin, steady stream (very thin stream) until it turns very thick and the blender has trouble processing (if you have a high or multispeed blender, use a medium speed). Thickening will not happen gradually, but rather suddendly, and may take as long as 4 minutes altogehter. Also, please note that the amount of oil necessary for thickening will depend on the speed of your blender and how slowly you pour, and can vary by as much as a cup. Transfer to a jar and store in the refrigerator for up to 1 month.
Makes 3 to 3 ½ cups

Or just buy vegan mayo.
Instructions
Sift all the dry ingredients together in a bowl and combine.
In another bowl (or jug) add the applesauce, butter milk and vanilla extract and whisk a little to combine.
Make a well in the centre of the dry ingredients and pour the liquid mixture in.
Mix together then add the mayonnaise and mix well to combine. (Ignore the mayo smell, it will disappear after it’s cooked).
Place two homemade pancake forms (instructions in the blog post) onto a frying pan over low heat and pour half the mixture into each form.
Place a lid on the frying pan and leave it for 10 to 20 minutes.
Once the pancakes have little bubbles and the edge is slightly cooked, flip them over with your hands (wear gloves to handle them because they will be hot).
Place the lid over the top again and cook for another 20 minutes on the other side.
Remove the pancakes from the heat, remove the staples from the forms and take the pancakes out of the form.
Serve the pancakes with your favourite toppings!
I get so caught up caring for and about other people that I always forget to do things for myself. Five months ago I moved back to my mums house because i was consumed by depression, anxiety and extrem episodes of paranoia thinking that everyone hates me or I'm being watched and filmed and judged constantly not even feeling safe in my own apartment living with the most loving and supporting housemate. Little by little I've started to remember all the things important to me that make me happy. All of a sudden materialistic things and money aren't important to me, I mean don't get me wrong I still get up at 5 am to go to work and grind all day to be able to do the things I want and one day I will understand my purpose on this planet, money can't buy you the feeling of running your personal best, nothing can compare to the feeling of reaching the top of a steep AF hill on a bike, the ease of your soul after a yoga session, the clarity of your mind after meditation or the power in your body after eating organic whole foods. I've neglected myself for so long I have to relearn how to truly listen to my body, how to open up to people again and express emotion, how to love myself, respect myself and care about myself. This isn't going to be an easy journey but I have some incredible people in my life and there is definitely no going back. 🦄💕✌🏼
This was the first of many. And I'm not sure if it was more physically or mentally challenging but it was by far the most rewarding. My grandparents cat loves bath time 😹 only months until I get to see them. Living on the other side of the world from the people who showed you the most love and affection when you were growing up is hard.
