Dorada (Sparus aurata)
Dorada, the fish with a golden spot on each cheek and a golden mark on the brow. The Basque name is ‘gold head’. Available almost everywhere. If you can choose between the cultured and the wild one, eat the wild one. Put a good hand of sea salt on it and gril it on a wood fire. Your taste senses won’t regret it.
Fish’s Head
Fish’s heads are a delicacy although they finish the most part of the times in the rubbish bin. To eat a fish head properly you have to learn it. Within the little bones, there’s a lot of white, smooth meat. I’ve been eating fish’s heads since a young girl. At home, we were the fish’s heads eaters: my dad, mum and me.
