Can I tell you the magic I feel?

So I’ve always joked that in another life, I would be a cheesemonger.

A couple years ago, I was running around with some friends having a grand ol’ drunken night and I thought of a really cute name for a cheese place. Which I’ve held really close to my chest over the last couple of years.

Once covid hit, Sal and I lived with my parents for almost two months. We didn’t know what the outcome would be at during March 2020. The fear was intense. We also didn’t want to be stuck in our studio apartment in Los Angeles so we rode out what we thought would be the end of covid until we knew it wasn’t, I’m chuckling to myself writing this in March of 2021. But during this time, I really started to think about what I wanted out of life. Sal and I knew that we were going to most likely be moving to New Orleans for a job in August of 2020. So I really started thinking about my next step, what I wanted out of a career, who I wanted to be in the next 10 years of my life and really starting to focus on the “level up” feeling that I’ve been yearning for for what feels like my entire life, so far. I decided to focus on exactly that. That I know I want to be my own boss, create and have my own business and give happiness through food.

Knowing I wanted to open a wine and cheese bar, I started to focus on getting education in cheese to become the cheesemonger I’ve always joked about but secretly wanted. In Las Vegas, I researched NOLA cheese shops. Once here I visited and supported my number one shop. I asked if they were hiring, which at the time they were not, covid sucks. I still applied and was told they weren’t hiring again. A few months later, I saw that they re-opened their second location since life is seeming to get an inch back to normal. So obviously I applied again, just in case they needed another hand. They responded that they were interested but didn’t know what they had available due to continuing lockdown restrictions, etc. But we met and had a great time. A couple days later they called me and offered me a part time job! Now I’m going to be getting the education I’ve always dream of getting. People always talk of manifesting or knowing that the universe has a plan for you... well there are only two times I’ve every experienced that - When I ran back into Sal and we finally got to explore what a romantic relationship would be like and this moment right here. Feeling so many moments in my life come together at last! I’m so excited. I feel like my life is actually elevating in a way I’ve always dreamed of. Cheers to chasing your dreams, even if you only have pieces here of there along the way. Cheers to hustling and knowing what you want and putting yourself out there. Cheers to thinking wildly and finally exploring what you want out of life. Go follow your dream, your fire and your life!
