1) I usually just switch between multiple brushes depending on the piece, how I want the mood to be. Sometimes I just get bored of my usual brushes and switch ಥ‿ಥ. For her I specifically used chalk brushes for lineart and added textures on her dress later in editing.

2)I usually use 2223x2826pxs because its perfect size for instagram so that nothing gets cut out, but I wish I could be more flexible w my canvases
