For those novice bread makers out there, sourdough is among the most difficult to bake. On his official post Rosendahl shares this recipe, with one caveat –– all ovens are different so watch closely!
Method: Preheat oven 275°C/527°F with the baking steel on a wire rack and a deep pan underneath for boiling water to create steam. When preheated pour 1 liter of boiling water into the pan 3 minutes before baking and turn down to 250°C/482°F. I score and bake my loaves directly from the fridge (cold proof for 18-20 hours) after final shaping and tucked in banneton/proofing basket. Bake with steam for 20-25 minutes. Turn down to 220°C/428°F and remove the pan. Bake without steam for 20-25 minutes or until the crust is dark golden.
