SUCCULENT BABY CHICKEN Super tender & succulent baby chicken - rosemary - in goose fat boiled little potatoes - jus & butter 🍗🥔 — Comment: Rinse chicken, pat dry, season to taste, broil first at 120*C with garlic cloves & rosemary, then at 220*C to add color for a few minutes. Wash little potatoes, boil them at 120*C in pure goose fat for about 50 minutes or until tender. Remove, season with Maldon salt. Plate and serve. http://bit.ly/2UnBYPV

FARMER’S RÖSTI Swiss hash brown potatoes - succulent ham - Swiss Raclette cheese - awesomely fried country egg fresh from the farm 🍳 — Comment: Boil potatoes without salt half way. Peel and grate with a Rösti grater, season with nutmeg and salt. Fry in a nonstick pan at medium high with sweet butter and/or lard about 4-5 minutes each side. Top with ham and Raclette cheese and melt in oven at high heat, top with butter fried fresh egg (low heat no color on the bottom, still a bit runny). http://bit.ly/2FQIYlr

BRAISED BEEF WITH HOMEMADE MASH 24 hr slow braised beef - homemade mashed potatoes with Fleur de sel 🥩🥔 — Comment: Braise beef at 80* C for 24 hours in oven. Bake potatoes on salt, scrape out flesh, mash, add hot milk, lots of butter, season to taste with Fleur de sel. http://bit.ly/2sCi1sV

PORK PILAF Pork filet - mushroom cream sauce - sun dried tomatoes - sage - pilaf rice ring 🍖🍚 — Comment: Pilav, polow, plov, pilau, palau originates from either Persia, Bagdad or Syria and dates back to the 13th century. Many middle eastern and eastern countries have developed different dishes around this hotchpotch dish.
