Full City Rooster - Dallas, TX

Stopped in to meet Michael Wyatt, owner/operator and roaster at Full City Rooster, A Coffee Roasting Studio in Downtown Dallas, TX.  Had a great visit with MW and learned about his brand new, hi tech, environmentally friendly Loring Coffee Roaster. Fresh from Equator Coffee Roasters

Just opened for this morning, a Costa Rica La Pira from Equator Coffee Roasters in Northern California.  Enjoying my first cup right now.  You can taste the natural process.

While in Las Vegas for the holiday we stopped at Sambalatte in Summerlin for a couple of pour overs. An awesome locally owned coffee cafe with a good selection of coffee and sweets. Siphon, Chemex, Hario and French Press are offered as manual brews, as well as your usual espresso offerings. J had a San Pedro with chocolate, peanut butter and caramel notes. I had a Yergacheffe that proved to be pretty classic. Great tasting coffee.

New from Coffee & Tea Collective

An excellent roast from Coffee & Tea Collective!  A very nice and flavorful cup of coffee.  This is a classic Yirgacheffe with fruit, chocolate and nut taste notes.  C&TC does it again.

33 cups of coffee

J just gave me the greatest little gift, a coffee log book!  This little paperback log book is a MUST have!!  Can't wait to start my coffee diary.  Maybe I'll get better at my taste profiles.

Just opened this from Forty Ninth Parallel Coffee Roasters.

Interesting flavor notes: Orange blossem, honey, peach, apricot and sumac.

I'm not so sure about the sumac, but the other flavors I can taste.  The fruit and honey become noticeable as the cup cools.  I really enjoy this particular roast.

What am I?

Just to be clear, I'm not a professional barista, coffee buyer, roaster, or cafe owner.  I am a consumer.  Dedicated in the pursuit of a good cup of coffee from just about anywhere.

This past year I went from a SBUX regular, constantly reloading my gold card, standing in queue, waiting for my coffee of the day.  To browsing and tasting each and every roaster I can find, enjoying many different kinds of coffee from all over the world.  Tasting different roasting methods and profiles, various harvesting processes, and gathering just enough knowledge to get me in a little trouble when talking with a professional.

This brings me back to the fact that I am merely a consumer.  But I consume a lot of coffee.
