Byleth has a weird appetite. They can and will eat most things, and there's very few things they straight up won't eat, but it's moreso the quantity of food that they struggle with. Before becoming a professor at Garreg Mach, they would often skip a meal every day so that supplies for the whole mercenary band would last long, but after joining the staff and realizing that eating meals with the students was not only normal but encouraged to a degree, Byleth started skipping breakfast so that they could eat a meal with the others more easily. The portions of the academy were more than they were used to, and it took some time for them to adjust.
Shez is a truly voracious eater. She'll eat basically anything like Byleth, but unlike them, she will eat like she doesn't know when she going to be able to next. This usually means that she'll eat a lot of food all at once, just in case she has to go a day or two (or three) without being able to eat at all. Shez will also hoard food to a minor degree if allowed, due to the same reasoning for eating enough food to rival Raphael.
Claude doesn't trust most food, especially if he can't watch while it's being cooked or hasn't it cooked it for himself. He's no stranger to food being poisoned, and while he's given himself a decent resistant to a lot of known poisons out there, he doesn't exactly want to risk being immobile with pain thanks to not being careful with his food. He would eat at Garreg Mach more easily because of being able to watch the cooks work, and when eating at the same time as most of the other students, he could reason with himself that trying to poison him would likely lead to more accidental poisonings than most assassins' would want to deal with, and that made it unlikely for the food to be poisoned. Even so, he only really ate peacefully if he could make his own food while alone. It's a habit that did stay with him over the years, though it gradually decreased in severity, even as his station of power rose during the war.
