Adrian Nelson in What Baking Can Do (x Amanda Weston)

plays lacrosse (+ maybe does other sports with Forester, hates him), he wants to go professional with lacrosse and then once he retires he wants to return to Stars Hollow and either be a sports coach or gym teacher. In university he's on a lacrosse scholarship but getting a business degree to have a foundation for a post-sports career and to help Amanda with the business side of owning Weston's since she was definitely not prepared when that happened, also starts getting mentored to eventually take over Luke's if/when Luke retires

Sweet as fuck, soft boy, loves his girlfriend. People tend to expect him to be a dumb jock and while he does care more about his sports than his grades, he is a pretty good student (and Fran absolutely approves of him dating her granddaughter)
