working on branching out with my cooking and producing a lot of simple pasta dishes that don't take a lot of effort b/c i like pasta, my gf likes pasta, easy

I'm currently most of the way through figuring out the right little twists to put on Pasta all'Assassina which is basically just pasta, toasted red pepper flake, and a 'sauce' of 1:1 tomato puree and water, with more pepper and spices to flavor, and it's fucking unbelievably delicious, entirely based on using that sauce to cook the noodles in a pan? it's insanely good.

You kinda just ladle the 'sauce' over it and let it cook down and the sauce get absorbed, then as it cooks down it starts to caramelize? It builds this beautiful texture if you let it get extra crispy that's just past al dente but not in that unpleasant toothsome way undercooked pasta gets, you know what i mean?

I'll take photos next time i make it, it gets this beautiful orange-brown-black caramelization towards the end
