These Sparkle Star Sugar Cookies are Gluten-Free are a delicious treat for any event. With a base of buttery almond and coconut flour and sparkling sugar on top, they look beautiful and taste great. Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1/2 cup granulated sugar. 1/2 cup unsalted butter, softened. 1 egg. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1/4 cup sparkling sugar for coating. 1/2 teaspoon edible glitter optional, for extra sparkle.
Instructions: Preheat oven to 350F 175C. In a mixing bowl, combine almond flour, coconut flour, granulated sugar, softened butter, egg, vanilla extract, and salt. Mix until well combined and a dough forms. Divide the dough into small balls and flatten them slightly into disc shapes. Roll each disc in sparkling sugar until coated on all sides. Place the coated cookies onto a baking sheet lined with parchment paper, spacing them apart. If desired, sprinkle a pinch of edible glitter on top of each cookie for extra sparkle. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
