Crepes with cream
Razala(Bengali mutton dish):- Ingredient :- 1. Mutton(with bones/small cubes)= 2 lb. 2. Onion(chopped)= 2 medium . 3. Garlic(chopped)= 2 tbsp. 4. Turmeric = 1 tbsp. 5. Ghee/ oil= 3 tbsp. 6. Black pepper = 10 corns. 7. Bay leaf= 2. 8. Cinnamon stick= 2 small stick . 9. Clove (whole)= 3 - 4. 10. Salt= to taste. 11. Ginger (chopped)= 2 tbsp. Method. 1. Heat oil ,add every thing along with mutton and fry until mutton changes its colour. 2. Now add 2 cups of boiling hot water and stir. 3. Cover the lid and cook the mutton on medium low heat until meat turns very soft. 4. Gravy should be soup consistency so if you find less gravy add more boiling water and cook on high heat until it come to boil. 4. Serve with home made paratha and lemon wedges.
Dry cauliflower Manchurian:- Ingredient:- 1. Cauliflower (steam/tear small parts) = 1 cup. 2. Basan= 3 tbsp. 3. Cornflour = 3 tbsp . 4. Egg= 1. 5. Chilli paste= 3 tbsp. 4. Salt = to taste. 6. Turmeric powder = ½ tsp. 7. Lemon juice= 3 tbsp. 8.cumin seed=!¼ tsp. 9. Oil= ½ cup(for deep frying). 10. Red food colour= 2 pinch. Method:- 1. Take all ingredient in a deep bowl ,mix well until everything cost very well on cauliflower . 2. Keep a side for 10 min. 3. Heat oil on medium high and fry cauliflower until crisp golden brown. Tempering :- 1.Fry some thinly slice onion and green chillies. 2. Spread fried onion and green chillies just befor serving. 3. Serve chilli garlic sauce along the dish.
Pan fry fish:- Ingredient :- 1. Fish fillet(boneless )= 1 2. Ginger/garlic paste= ½ tsp (each). 3. Chilli paste = ½ tsp. 4. Lemon juice= 2 tbsp. 5. Cumin seeds = ¼ tsp(crushed) 6. Salt = ½ tsp. 7. Egg= 1 Ingredient 2(dry). 1. All purpose flour = 4 tbsp. 2. Basan or corn flour = 3 tbsp. 3. Red chilli powder= 1 tbsp. 4. Turmeric powder= ½ tsp. 5. Salt = ½ tsp. Method1:- 1. Marinate fish with ginger/ garlic paste,chilli paste,lemon juice,cumin seed,salt and egg. 2. Marinate it for at least 30 min. 3. Keep refrigerated. Method 2:- 1. Mix all dry ingredient in a plate. 2. Dredge marinated fish in this dry coating . 3. Press fish gently in flour from both side. 4. Keep a side . Method 3:- 1. Heat 4 tbsp of oil and drop the fish it. 2. Fry fish for 5 min each side on medium low heat or until golden brown. :- sprinkle some lemon juice just before serving .
