These Portobello Alpine Beef Burgers are a tasty take on traditional burgers. They have juicy beef patties topped with Swiss cheese and grilled portobello mushrooms. This Alpine-inspired treat is taken to a whole new level with the addition of arugula, red onion, and a zesty mayo-Dijon spread.
Ingredients: 4 large portobello mushrooms. 1 lb ground beef. 4 slices Swiss cheese. 4 whole-grain burger buns. 1 cup baby arugula. 1 small red onion, thinly sliced. 1 tablespoon olive oil. Salt and pepper to taste. 1 teaspoon garlic powder. 1 teaspoon smoked paprika. 1/2 cup mayonnaise. 2 tablespoons Dijon mustard.
Instructions: Warm up the grill over medium-high heat. Take the stems off of portobello mushrooms and clean them. Add garlic powder, smoked paprika, salt, and pepper to ground beef in a bowl. Rub the meat together. Make 4 patties out of it. Olive oil should be used to coat the mushroom caps and beef patties. For 4 to 5 minutes on each side, grill the mushrooms until they are soft. For 4 to 6 minutes on each side, or until done to your liking, grill the beef patties. Put a slice of Swiss cheese on top of each beef patty in the last minute of cooking and let it melt. On the bottom half of each bun, spread mayonnaise and Dijon mustard. Put a grilled portobello mushroom on the bun first, then a beef patty with Swiss cheese on top. Put arugula and sliced red onion on top, and then put the top half of the bun on top of that. Serve right away and enjoy!
