Kavatthu/Purple yam Avarakkai/Hyacinth beans kootu/Coconut curry to you w Methi/Fenugreek Theplas! Recipe: Peel the purple yam, wash and pat dry. Cut into cubes. Cut the hyacinth beans into 1 inch pieces. In a sauce pan, add both the veggies along a water, turmeric & salt. Blend together some shredded coconut, green chilies, cumin & garlic. Once the veggies are cooked add the ground paste. Let it cook for a couple of minutes. For garnishing, take a small sauté pan, add coconut oil, mustard seeds, once it starts to splutter, add the Urud dal, curry leaves and a broken red chilies.
