These Banilla Sandwich Cookies are a delectable treat that combines banana and vanilla flavors. A refreshing and indulgent dessert is created by filling soft vanilla wafers with creamy vanilla ice cream and fresh banana slices.
Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/4 cup granulated sugar. 1 teaspoon vanilla extract. Sprinkles. Bananas, sliced. Vanilla ice cream optional.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar and vanilla extract in a bowl until the mixture is smooth and fluffy. Add the flour slowly to the butter mixture and mix it in until a dough forms. Make a ball out of the dough and lightly press it down. Cut the dough into small rounds with a cookie cutter or the rim of a glass. Place the rounds on the baking sheet that has been prepared. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are just beginning to turn golden. On a wire rack, take the cookies out of the oven and let them cool all the way down. Put a scoop of vanilla ice cream on the bottom of one cookie after it has cooled down. Add some banana slices to the ice cream and then put another cookie on top to make a sandwich. Cover the ice cream that's showing by rolling the edges of the sandwich in different colored sprinkles. Do it again with the rest of the ice cream, bananas, and cookies. You can serve the Banana Sandwich Cookies right away or put them in the freezer to make them firmer before you do.
