Banitsa (Bulgarian: баница) is a traditional Bulgarian dish in the börek family. It is prepared by layering a mix of whisked eggs and pieces of cheese between filo dough pastry and baking it in the oven.
Traditionally, lucky charms are put into it on occasions such as New Year's Eve. They may be coins or small symbolic objects as a method of fortune telling. More recently, people have began writing happy wishes on small pieces of paper and wrapping them in tin foil. Wishes may include happiness, health, or success throughout the new year.
Banitsa is served for breakfast with plain yogurt, ayran, or boza. It can be eaten hot or cold. Some varieties include spinach, sweet milk, or pumpkin. Traditionally, Bulgarians prepare banitsa on 2 holidays – Christmas and New Year's Eve.
