At a Twelfth Night (of Christmas/Epiphany Eve) Party this past weekend, I was served a different version of this cake without a filling. It was DELICIOUS, and perfect the next day with hot tea. I heartily recommend you explore both Dorie Greenspan's traditional version as well as Claire Thomas's variation.
