Because I’m rubbish at life, I ended up not taking any pictures this day.... oooops, but here we go anyway:
Breakfast
My experiment with overnight oats. Actually went down alright! Porridge oats, cashew nut milk, frozen berries, a pinch of cinnamon, drizzle of honey, and a spoon of desiccated coconut. Popped them in the fridge the night before and ate them in the morning. the idea of porridge but super fresh!
Lunch
Part of my batch cook was a vegan spag bol. Made with puy lentils, boiled in veg stock and a spoon of marmite. then chopped onions and garlic, lightly cooked in olive oil, add diced carrots, onions and celery if you fancy it and cook for about 5 mins followed by the lentils. 2 tins of chopped tomatoes, with aaalll the herbs. Basil and oregano (fresh if you can get it) and a spoon of marmite. give it a solid stir and pop the lid slightly off and let it simmer for a while, stirring every now and again. I then separated it into portions and popped it in the freezer. Then I just cooked up some pasta.
Dinner
That evening we went round to visit my friends, I brought round a curry I made, they made a curry and we just shared some amazing food. The curry was super simple. Coconut oil, diced onion, sweat that out, add all the spices: Cayenne pepper, garam masala, turmeric, ginger, marjoram. give it a stir and let the heat release the flavours a bit. Then add a tin of coconut milk, 500ml of veg stock, cook for a little bit longer and add a tin of drained chickpeas and some precooked/soaked lentils. Nom.
