This dish is flavorful and comforting, with a hint of spice and served over fluffy rice, combining the earthy taste of black beans with the creaminess of coconut milk.
Ingredients: 1 cup rice. 1 cup black beans, cooked. 1 can coconut milk. 1 onion, finely chopped. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 tsp cumin powder. 1 tsp paprika. Salt and pepper to taste. 2 tbsp vegetable oil. Fresh cilantro for garnish.
Instructions: Till the water runs clear, rinse the rice under cold water. Rice, cooked black beans, coconut milk, diced red bell pepper, minced garlic, chopped onion, cumin powder, paprika, salt, and pepper should all be combined in a pot. Over medium heat, bring the mixture to a boil. Then, lower the heat to a simmer, cover, and cook for 15 to 20 minutes, or until the rice is tender and the liquid has been absorbed. In a skillet over medium heat, preheat the vegetable oil while the rice cooks. Stir-fry the cooked rice and bean mixture in the skillet for five to seven minutes, or until it begins to take on a hint of crunch. Serve hot, garnished with fresh cilantro. Savor the flavorful Coconut Rice and Beans!
