Indulge in the rich flavor of beer-brined BBQ chicken, where the tender meat is infused with a perfect blend of spices and a caramelized BBQ glaze.
Ingredients: 4 lbs chicken pieces drumsticks, thighs, breasts. 4 cups beer preferably a light lager. 1/2 cup kosher salt. 1/4 cup brown sugar. 1 tablespoon black pepper. 1 tablespoon paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon cayenne pepper. 2 cups BBQ sauce.
Instructions: In a large bowl, combine beer, kosher salt, brown sugar, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to create the brine. Place chicken pieces in the brine, ensuring they are fully submerged. Refrigerate for at least 4 hours or overnight for best results. Preheat your grill to medium-high heat. Remove chicken from the brine and pat dry with paper towels. Grill chicken for 15-20 minutes per side or until internal temperature reaches 165F 74C. During the last 5 minutes of grilling, baste the chicken with BBQ sauce, turning and basting until the sauce caramelizes and forms a flavorful crust. Remove chicken from the grill and let it rest for a few minutes before serving.
