This oven-baked blueberry skillet pancake is a delightful twist on traditional pancakes. It's easy to make and perfect for breakfast or brunch gatherings. The blueberries add a burst of fruity flavor, and the oven baking creates a fluffy and golden pancake that's sure to impress.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 2 large eggs. 1 cup buttermilk. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. 1 cup fresh blueberries. 2 tablespoons powdered sugar for dusting. Maple syrup for serving.
Instructions: Turn on your oven and heat it up to 375F 190C. In a big bowl, mix the flour, sugar, baking powder, baking soda, and salt together with a whisk. Put the eggs in a different bowl and beat them. Then add the buttermilk, melted butter, and vanilla extract. Combine well. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Make sure not to mix it too much; a few lumps are fine. The fresh blueberries should be added slowly. Warm up a cast-iron skillet or any other skillet that can go in the oven by putting it in the oven before you start cooking. When you take the skillet out of the oven, use cooking spray or a little butter to keep it from sticking. Spread the pancake batter out evenly in the pan after adding the batter. The pancake should be baked in a hot oven for twenty to twenty-five minutes, or until it puffs up and the edges turn golden brown. The toothpick test: stick it in the middle to see if it's done; it should come out clean. Take the pan out of the oven and let it cool for one minute. Put powdered sugar on top of the cake. Ingredients: 1/4 cup whole wheat flour. 1/2 tsp baking powder. 1 tbsp maple syrup. 1/4 cup almond milk. 1/4 cup fresh blueberries. 1/2 tsp vanilla extract. 1/2 tsp coconut oil for greasing.
Instructions: In a microwave-safe mug, add the whole wheat flour and baking powder. Stir to combine. Add the maple syrup, almond milk, and vanilla extract to the mug. Stir until the batter is smooth and free of lumps. Gently fold in the fresh blueberries into the batter. Grease the inside of the mug with coconut oil to prevent sticking.
