Ingredients: 1 cup black beans, soaked overnight. 1 onion, diced. 2 cloves garlic, minced. 2 carrots, sliced. 2 celery stalks, chopped. 6 cups vegetable broth. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 cup pumpkin puree. 8 oz boo-dles black bean noodles. 1 cup spinach, chopped. Juice of 1 lime. Optional toppings: shredded cheese, sour cream, chopped green onions.
Instructions: Soak the black beans, then add the diced onion, minced garlic, chopped celery, sliced carrots, and vegetable broth to a large pot. Add the chili powder, cumin, paprika, salt, and pepper. Once the mixture reaches a boil, lower the heat, and simmer the beans for 45 to 60 minutes, or until they become tender. After adding the pumpkin puree, simmer for a further ten minutes. As directed on the package, cook the boo-dles, then drain and set them aside. Cook the chopped spinach in the soup until it wilts. Add the lime juice and stir. To serve, fill each bowl halfway with boo-dles and pour hot soup over top. If preferred, garnish with chopped green onions, sour cream, and shredded cheese.
