These braised fingerling potatoes with fresh herbs are a flavorful and comforting side dish perfect for any occasion. The combination of tender potatoes cooked in a savory broth with aromatic garlic and fragrant herbs creates a dish that's both simple and delicious.
Ingredients: 1 lb fingerling potatoes, halved lengthwise. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 cup vegetable broth. 2 tablespoons fresh parsley, chopped. 2 tablespoons fresh thyme leaves. Salt and pepper to taste.
Instructions: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add halved fingerling potatoes to the skillet, cut side down, and cook until golden brown, about 5 minutes. Pour in vegetable broth and bring to a simmer.
