It's amazing how I can look at a recipe and still get every step wrong somehow. I started cooking the eggs in the pan before even slicing the mushrooms or getting anything ready. Apparently, you're supposed to cook the eggs last. I also didn't realize that I was supposed to whisk them in a separate bowl, and also not cook them with the tomatoes and mushrooms. Or that the tomatoes were not even mentioned to go into the pan at all. I also overstuffed the burrito...
Anyway, THE GOOD NEWS: you can get all the steps wrong and out of order and it still turns out tasty!
TIP #1: The original recipe actually has slightly different steps... I altered them a bit because I simply didn't see a reason to use a separate bowl for the eggs, a separate bowl/plate to "set aside" the mushrooms, etc. It can all go in one pan, let's not dirty every dish before we even eat, right? I would cook up the mushrooms first though so the eggs don't overcook (mine surprisingly didn't get overcooked despite being in the pan for what seemed like forever).
TIP #2: The recipe called for shredded mozzarella cheese, which I used, but I think I'd try cheddar next time because the mozzarella seemed out of place. I didn't specify the cheese on the recipe card for that reason. You can also use any add-ins you want - spinach would probably be good in this, and obviously you can skip the ham if you prefer.
