Making some brined chicken bagel sandwiches today for a pax of 5! We brined the chicken for about 36 hours and slow roast it to perfection for another 2 hours. The meat is succulent and flavorful! Serve it with some tarragon sauce, baked zucchini and fresh vegetables. I love Whole Chickens 🙌 . A brine adds flavor and keeps the meat tender and juicy. You can brine whole chickens or broken-down birds; those pan-roasted thighs would surely benefit from it. All it takes is a little planning (you'll need to devote at least a couple of hours to the process, but it's happily hands-off). . Rinse off the brine and pat it as dry as much as possible before cooking. Remember that wet skin prior to roasting will make for a soggy—rather than crispy and golden-brown—bird, so don't let your hard work be upstaged by a lackluster finish.. .
