Hatch Mild Whole Green Chiles Recipe: ‘Fiesta Time’ Smothered Green Chile Bean Burrito
A Mexican vibe is always welcome. If you love spicy flavors without too much heat dancing on your tongue, then this enchilada dish - packed with a mild green chile tang - is sure to be a family favorite. The colours and tastes are reminiscent of fiesta time, so get ready to party!
With 10 minutes prep time and 10 minutes cooking time, you will have extra time to get your party hat on! (Serves 2)
Heat 1 can (15oz) HATCH green chile enchilada sauce in a saucepan. Keep warm.
In a non-stick skillet, fry 1 chopped onion in 1Tbs cooking oil till translucent.
Add 1 can (15oz) pinto beans and 1 can (4oz) HATCH green chiles, diced. Cook until warmed.
Warm 2 tortillas in the microwave for 10 seconds.
Make the burritos: add the bean mixture to the center of each tortilla and sprinkle with shredded Mexican cheese blend. Fold in the sides and roll to form a burrito.
Add the enchilada sauce. Sprinkle with more cheese.
Microwave on high for 20 seconds or until the cheese is melted.
Garnish with shredded lettuce and diced tomatoes. Serve immediately.
