Homemade Palmiers, also known as Elephant Ears, are caramelized, crispy puff pastry cookies with a hint of cinnamon.
Ingredients: 1 sheet puff pastry, thawed. 1/2 cup granulated sugar. 1 teaspoon ground cinnamon.
Instructions: Preheat your oven to 400F 200C. Sprinkle some of the sugar evenly on your work surface. Place the thawed puff pastry sheet on the sugared surface. Combine the remaining sugar and ground cinnamon in a bowl. Evenly sprinkle a generous layer of the cinnamon-sugar mixture over the puff pastry sheet. Starting from one long edge, tightly roll each side of the puff pastry sheet towards the center, creating two rolls that meet in the middle. Chill the rolled pastry in the freezer for about 10-15 minutes to firm up. Preheat the oven to 375F 190C while the pastry chills. Remove the chilled pastry from the freezer and slice it into 1/4-inch thick slices. Place the slices on a baking sheet lined with parchment paper, spacing them apart to allow for expansion. Bake for about 12-15 minutes or until the cookies are golden and caramelized on the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
