Orange Beef Stir-Fry with Shiitake, Cabbage, and Bok-Choy
Makes 12 servings. Prep time: +90 minutes. Requires large wok and wooden spoon, cutting board and knife, and cheese grater.
Slice a med-large tri-tip steak into strips and fry in 3 tbsp. butter with six cloves of garlic, minced.
Let beef fry on medium heat for 15 minutes. Add water to avoid scorching.
Add about 9-12 oz. shiitake mushrooms chopped into large pieces, 3 tbsp. boxed mushroom broth, 2 tbsp. soy sauce, and 1 tbsp. toasted sesame seeds.
Let simmer for another 30 minutes or until beef is tender.
Grate a small piece of fresh ginger (about 2 tsp.) Add 1 tsp. red pepper flakes. Add 2 fresh oranges, juiced, or 1 cup. bottled. Add 1/3 a head of green cabbage and 1 bunch bok-choy.
Simmer for another 30 minutes until vegetables are cooked. Add 2 tsp. white sugar.
Add package (8 oz.) clear noodles. Wait another 15 minutes for noodles to become soft.
