Basmati rice, cauliflower, and peas are combined with flavorful and nourishing spices to create the delicious and nutritious Indian rice dish known as cauliflower pea pulao. It's the ideal gluten-free and vegan choice for a filling dinner.
Ingredients: 2 cups basmati rice. 1 medium cauliflower, cut into florets. 1 cup peas. 2 onions, sliced. 2 tomatoes, chopped. 4 cloves garlic, minced. 1-inch ginger, grated. 2 green chilies, chopped. 1 teaspoon cumin seeds. 1 teaspoon garam masala. 1 teaspoon turmeric powder. 1 teaspoon coriander powder. 1/2 teaspoon red chili powder. Salt to taste. 2 tablespoons oil. 3 cups water.
Instructions: Wash and soak basmati rice in water for 30 minutes, then drain. Heat oil in a large pan. Add cumin seeds and let them splutter. Add sliced onions and saut until golden brown. Add minced garlic, grated ginger, and chopped green chilies. Saut for 2 minutes. Add chopped tomatoes and cook until they turn mushy. Add cauliflower florets, peas, turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for 5 minutes. Add drained basmati rice to the pan and gently mix with the vegetables. Pour water into the pan and stir gently. Bring it to a boil. Once boiling, cover the pan with a lid and reduce the heat to low. Cook for 15-20 minutes or until the rice is cooked and water is absorbed. Fluff the rice gently with a fork. Serve hot.
