Brewday - Honey Witbier
Third week, third Brewday! This time the last of our two Festival Specials that we are making for the Cawood Riverside Beer Festival on Sat 4th May. Based loosely on my recipe for the Honey & Orange Witbier Bayla’s Ruin that I just brewed but dialing back on the ABV, Honey and adding some honey malt, bitter and sweet orange peel as well as crushed coriander seeds to make this more of a complex but still traditional Witbier. As well as sourcing the fabulous Yorkshire Honey from Beehive Villa in Cawood we also used some of my homegrown First Gold hops which have a lovely marmalade and citrus flavour that should compliment the orange peels and lemony coriander seeds, so a traditional Wit with a bit of the local Cawardian twist.
Together with Alistair’s Elemental Brewery we brewed up just a single keg of this beer, as I write it’s probably nearing the end of it’s fermentation. Using the same kit as we did a few weeks back at The Jolly Sailor it was a relatively simple process. Now just to wait for the Beer Festival to try it. As style dictates we’ve managed to fit another keg line in so this can be served chilled at higher carbonation than cask which suites the style much better.
