Hello friends, welcome to my little slice of the internet!! My name is Kelsea and this is my blog!! This blog is dedicated to creating and exploring cheap easy recipes that are vegan!!
But first a little about me and why I choose to be vegan.
I’m 24 and trying to navigate veganism. Not for the first time in my life, but hopefully for the remainder. I have always loved animals. And I do mean LOVE. I have had at least one pet or more since I was a baby. And I’ve been dabbling in veganism since I was in the 7th grade. But it wasn't until this last month, after years of carnivorous eating, that I decided to give it another go. But this time I’m approaching it in a totally new way. I’m approaching this new lifestyle with a sense of flexibility, curiosity and excitement.
I believe that to be successful we must first be flexible. Flexibility is the path to least resistance. At least in my mind. So I am coming to what I consider my thrice daily practice with a sense of flexibility. Sure in my ideal world I’d be 100% vegan all the time with no slip ups or cravings or mistakes. But that’s just not realistic. So instead of setting my mind on that one unachievable goal I have it set on a better more easily accessible goal. Which is to consume food and other products mindfully and compassionately. But I allow myself the space to, if I so desire, have some cheese, or a scoop of my boyfriends totally non vegan but absolutely delicious ice cream. Flexibility people. Its a revelation.
I also believe that to be successful in our endeavours we must be truly curious about all aspects of them. To feed my curiosity about a more plant based diet I’ve bought cook books, watched videos, seen documentaries, done research online. All trying to learn as much as I can about how what we eat impacts our bodies, minds, planet and the animals we share the earth with. I hope to continue on this track and to learn more as I go along about nutrition and animal rights and the environment.
And finally no new undertaking would be complete without an element of excitement. I’m eager to learn and grow and share my experiences along the way. I’ll be posting here, and on my Instagram kelsea.oreilly as often as I can find something interesting to cook.
