Fresh out of the oven, these cheddar chive potato biscuits are great. You can eat them for breakfast, brunch, or as a tasty side dish.
Ingredients: 2 cups mashed potatoes. 1 cup shredded cheddar cheese. 1/4 cup chopped chives. 2 cups biscuit mix. 1/2 cup milk. 1/4 cup melted butter.
Instructions: Warm the oven up to 425F 220C and grease a baking sheet. Put mashed potatoes, cheddar cheese, and chives in a large bowl and mix them together. Add the milk and biscuit mix and stir just until everything is mixed together. Place spoonfuls of dough on the baking sheet that has been prepared. It should be baked for 12 to 15 minutes, or until it turns golden brown. Before you serve, brush with melted butter.
