Ingredients: 4 ripe nectarines, sliced. 2 tablespoons unsalted butter. 6 cups mixed salad greens. 1 cup aged cheddar cheese, cut into chunks. 1/4 cup chopped toasted almonds. 2 tablespoons balsamic vinegar. 2 tablespoons extra-virgin olive oil. Salt and freshly ground black pepper, to taste.
Instructions: Put the butter in a big pan and melt it over medium-low heat. Put the sliced apricots in the pan and cook for three to four minutes, or until they start to turn brown and get soft. Stir every so often. Take the nectarines out of the pan and let them cool down a bit. Very good olive oil and balsamic vinegar should be mixed together in a small bowl using a whisk.
