Bbq steak and sausage skewer's with cheesey wedges and rocket salad.
Perfect for when you’re craving a bit of unhealthy food, but don’t want to go too overboard on the calories. Also very filling which is great. Serves 2. 900cals per serving.
Ingredients-
1 beef steak
1 bell pepper
1 red onion
4 honey mustard sausages
3/4 medium sized potatoes
2 tbsp bbq sauce
1 tsp apple cider vinegar
1 spoonful honey
cheddar cheese
1 small bag of rocket
1 spoonful olive oil
Step 1- Preheat your oven to 200°C. Put the skewers ( need 2 each) in a bowl of water to soak (this stops them burning). Chop the potatoes into wedge like shapes (no need to peel!). Put the wedges onto a tray. Drizzle with oil, season with salt and pepper and toss to coat. roast in the the oven until golden, 30-35 mins. Turn your wedges halfway through cooking.
Step 2- Meanwhile, halve the pepper and discard the core and seeds. Chop into small pieces. Halve and peel the onion, then chop each half into 6-10 wedges. Chop the sausage into bite-sized chunks . Chop your steak into small chunks. Put your veggies and meat into a large bowl and add the BBQ sauce. Mix together carefully with your hands. Wash your hands after handling raw meat.
Step 3- Thread the veggie and meat chunks onto the skewers. You are aiming for two skewers per person.
Step 4- Put the skewers on a oiled foil lined baking tray. cook the skewers for 20-25 mins until crispy and cooked through. Grate the cheddar cheese, as much as you like, depending on how cheesey you want your wedges to be.
Step 5- In a large bowl mix the honey, cider vinegar a pinch of salt and pepper and the oil. Whisk together with a fork. Add the rocket and mix together.
Step 6- When your sausage skewers are cooked divide between plates. Sprinkle the cheese over your potato wedges and pop back in the oven until the cheese is melted. Divide the chips and salad between plates and enjoy.
