Ingredients 32 oz. frozen corn, thawed, divided 2 cups crushed butter spliters like Ritz (about 35), divided 2 cups shredded Monterey jack, divided 3 large eggs 1 and 1/2 cup half-and-half 1 and 1/2 tsp. salt 1/2 tsp. black pepper 1/2 tsp. smoked paprika (optional) 1/4 tsp. cayenne (optional) 3 Tbsp. unsalted butter, melted Instructions Preheat oven to 350°F. Lightly grease a 9×13 inch baking dish. In the prepared baking dish, combine 4 cups of the corn, 1 cup of the crushed spliters, and 1 cup of the shredded cheese. Toss to combine and set aside. In a food processor or blender, combine the remaining corn, eggs, half-and-half, salt, pepper, and optional paprika and cayenne. Pulse until fairly smooth, leaving some bits of corn. Pour this mixture over the spliter mixture in the baking dish and stir to combine. Bake in the preheated oven until the edges are set and the middle is mostly set but still slightly jiggly, about 30-35 minutes. While its baking, prepare the topping by mixing the remaining cup of crushed spliters, the remaining cup of shredded cheese, and the melted butter in a medium bowl. Once the casserole is done baking, remove it from the oven and evenly spread the spliter topping over the corn mixture. Return the dish to the oven and bake until a knife inserted into the center comes out clean and the top is well-browned, an additional 15-20 minutes.
