Ingredients: 1 lb boneless, skinless chicken breasts. 4 cups chicken broth. 1 cup diced carrots. 1 cup diced celery. 1 cup diced onion. 2 cloves garlic, minced. 1 tsp dried thyme. 1/2 tsp dried rosemary. 1/2 tsp dried sage. 1/2 tsp salt. 1/4 tsp black pepper. 1 cup heavy cream. 2 tbsp cornstarch. 2 tbsp water. Fresh parsley for garnish.
Instructions: Chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, sage, salt, and pepper should all be put in a slow cooker. It should be on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is done and the vegetables are soft. Take the chicken breasts out of the slow cooker and use two forks to shred them. Add water and cornstarch to a small bowl. Stir until the mixture is smooth. Mix the cornstarch and heavy cream together and add them to the slow cooker. Put the chicken shreds back into the slow cooker, stir them around, and cover it. For another 30 minutes, or until the soup has thickened a bit, cook on high. Serve hot with fresh parsley on top.
