Ingredients: 1 cup gluten-free rolled oats. 1/2 cup chia seeds. 1/2 cup walnuts, chopped. 1/2 cup unsweetened cocoa powder. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. A pinch of salt. 1/4 cup dairy-free chocolate chips optional, for topping.
Instructions: In a large mixing bowl, combine the rolled oats, chia seeds, chopped walnuts, and unsweetened cocoa powder. In a separate bowl, mix together the maple syrup, melted coconut oil, vanilla extract, and a pinch of salt until well combined. Pour the wet mixture over the dry ingredients and stir until everything is evenly mixed. Line an 8x8-inch 20x20 cm square baking pan with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the prepared pan, ensuring it's evenly distributed and compacted. If desired, sprinkle dairy-free chocolate chips on top and gently press them into the mixture. Place the pan in the refrigerator and let it chill for at least 2-3 hours or until the bars are firm. Once set, use the parchment paper overhang to lift the bars out of the pan.
