Ingredients: 2 cups grated sweet potatoes. 1 cup grated zucchini. 1/2 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup chopped fresh cilantro. 2 eggs, lightly beaten. 1/4 cup all-purpose flour. 1 teaspoon chipotle powder. 1/2 teaspoon cumin. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Preheat oven to 425F 220C. In a large bowl, combine grated sweet potatoes, grated zucchini, chopped onion, minced garlic, chopped cilantro, beaten eggs, all-purpose flour, chipotle powder, cumin, salt, and pepper. Mix until well combined. Line a baking sheet with parchment paper and lightly grease with olive oil. Scoop about 1/4 cup of the mixture and form into patties. Place the patties on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and crispy. Remove from the oven and let cool slightly before serving. Serve the baked chipotle sweet potato and zucchini fritters with your favorite dipping sauce or as a side dish. Enjoy!
