Shortbread cookies with a zesty lime twist that can be filled with luscious lime curd or jam.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. Zest of 2 limes. 1 tablespoon lime juice. 1/4 teaspoon salt. 1/2 cup lime curd or jam.
Instructions: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the lime zest and lime juice to the butter mixture, and mix well. Gradually add the flour and salt to the mixture, and mix until the dough comes together. Divide the dough in half, shape each half into a disc, and wrap them in plastic wrap. Chill in the refrigerator for at least 1 hour. Preheat the oven to 350F 175C. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Using cookie cutters, cut out desired shapes and place them on a baking sheet lined with parchment paper. Bake the cookies for about 10-12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cool, spread a thin layer of lime curd or jam on the bottom side of half of the cookies. Top with the remaining cookies to create sandwich cookies.
