Ingredients: 2 cups fresh strawberries, hulled and sliced. 2 cups mixed greens e.g., spinach, arugula, and lettuce. 1 orange, peeled and segmented. 1/4 cup red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 1/4 cup sliced almonds, toasted. For the Orange Dressing:. 1/4 cup fresh orange juice. 2 tablespoons olive oil. 1 tablespoon honey. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Mixed greens, sliced strawberries, orange segments, and red onion should all be put in a large salad bowl together. Whisk the honey, Dijon mustard, salt, and pepper into the fresh orange juice in a small bowl. This will make the dressing. Pour the orange dressing over the salad and toss it gently to mix. For Citrus Poppy Seed Dressing:. 1/4 cup fresh orange juice. 2 tablespoons fresh lemon juice. 1 tablespoon honey. 1 teaspoon poppy seeds. 1/4 cup olive oil. Salt and pepper to taste.
Instructions: Put the quinoa in a saucepan with 2 cups of water. Then rinse it under cold water. After the quinoa starts to boil, turn down the heat, cover, and let it cook for 15 minutes. Take it off the heat and cover it for 5 minutes. Use a fork to fluff it up, then let it cool down. Mix the cooked quinoa, blueberries, mango, grapes, and mint leaves together in a large bowl. To make the dressing, put the orange juice, lemon juice, honey, poppy seeds, olive oil, salt, and pepper in a separate small bowl. Set it aside. Pour the dressing over the salad and mix it all together. Sliced almonds and crumbled feta cheese should be put on top of the salad. Serve right away or put in the fridge until you're ready to serve. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook soba noodles. Run cold water over the drain and rinse. Put away. Put the cooked soba noodles, red cabbage shreds, cucumber slices, red bell pepper, edamame, green onions, and cilantro in a large bowl.
