salmon quinoa bowl
customisable quinoa bowl with a side of sweet potatoes and delicious yogurt dip.
for the quinoa:
usually i cook 1 cup of quinoa which is more or less 4 servings, since it’s a large quantity i store the rest for future quinoa bowls in the fridge for up to 3-4 days. it’s super ideal for when you don’t have a lot of time but still want something fun and nutritious. so, what you need:
1 cup of white or mixed quinoa
2 cups of water
salt as preferred, I put 1 tbs.
always follow the instructions of the packaging, but most of them follow the same process. rinse the quinoa in cold water 1-2 times, drain completely and put in a small pot with low flame, add the 2 cups of water and the salt , cover with a lit, and let cook for 15-20 min, depending on the product instructions. let rest for 2-5 min, and then it’s ready, it should have a fluffy texture.
for the sweet potatoes fries:
1 large sweet potato
salt & pepper
dried parsley
dried garlic
1 spoon of olive oil
a baking tray
parchment paper
towel paper
preheat the oven at 180ºC. while the oven heats, wash 1 large sweet potato and cut into fries shaped splices. on a baking tray, lay a sheet of parchment paper and put the fries separated from each other, with a towel paper press them a bit to release excess moisture and then season with salt & pepper, add the dried garlic and parsley and then drizzle with a bit of olive oil. cook for 15-20 minutes and flip them halfway.
for the yogurt dip:
greek yogurt or the one of your choice (i use lactose free)
1 lemon half
salt & pepper
dried parsley
mix all of the ingredients together in a small bowl and set aside.
quinoa bowl preparation:
Ingredients:
1 cup of cooked quinoa
salad mix (you can make this or just use your choice of greens)
feta cheese or any semi hard cheese
4 cherry tomatoes or 1 orange
1 handful of pistachios or any other seed that you like
2 boiled 6.5 min eggs (skip if desired)
smoked salmon or cooked tofu*
olive oil
salt & pepper
in a bowl, place half a cup of quinoa on the bottom, then on top place the salad with the fruits, the cheese and the seeds. add the protein and season to taste.
*the tofu can be roasted or slightly fried in olive oil with seasoning of choice.
this dish serves 2 hungry people as an amazing lunch.
