Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 2 teaspoons instant espresso powder. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1/4 cup strong brewed coffee, cooled. 1 large egg. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. For Mocha Syrup:. 1/2 cup strong brewed coffee. 1/2 cup chocolate chips. 1/4 cup heavy cream. 2 tablespoons sugar.
Instructions: In a mixing bowl, whisk together flour, sugar, espresso powder, baking powder, baking soda, and salt. In a separate bowl, combine buttermilk, cooled brewed coffee, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Preheat a griddle or non-stick skillet over medium-high heat and lightly grease it with cooking spray or butter. Pour 1/4 cup portions of pancake batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter. For the Mocha Syrup, in a small saucepan, combine brewed coffee, chocolate chips, heavy cream, and sugar. Heat over low heat, stirring constantly until the chocolate chips are completely melted, and the syrup is smooth. Serve the Cappuccino Pancakes drizzled with the Mocha Syrup. Enjoy!
