CookUnity Honey-Ginger Grilled Chicken with jasmine rice and broccoli
Would you look at that it’s chicken, finally! I feel like it’s been a really long time since I’ve had any chicken (the tunachicken in that first quesadilla doesn’t count). Unfortunately, this was chicken thigh, which I don’t like as much as breast (definitely a breast girl, me).
I kind of wish they had done a bed of rice under the chicken and then put the veggies in the small side spot - it would’ve worked out better. I ended up cooking everything up like this, then switching the veggies to the small spot & putting the rice and sauce under the chicken. The rice was really good, and microwaved well. The grilled chicken was decent considering it was thigh meat. The sauce was nice, but definitely not gingery enough. The broccoli was good but needed a little something, as did the cherry tomatoes (they ended up just being like stewed tomatoes, which is kind of gross) so I put some olive oil and some spices in there and they were much better.
