White Chocolate Chip Cranberry Cookies
These are quite possibly my favorite new cookies... though every time I make them I edit the recipe slightly. I think I know what to do next time. here is the original recipe. I think it needs an extra 1/4 cup of four and an extra 2 TBS of brown sugar which are not in the recipe below.
Ingredients:
1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 TBS vanilla extract
1 large egg
1 1/2 cups all purpose flour
1 1/2 tsps baking soda
1 cup dried cranberries, copped
3/4 cup white chocolate chips
3/4 cups macadamia nuts, chopped (optional)
Directions:
Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper
With electric mixer, cream butter and both sugars until smooth.
Add vanilla and egg, mix well
In small bowl, sift together the flour and baking soda. Spoon the flour mixture gradually into the sugar mixture. Fold in cranberries, white chocolate and nuts.
Drop heaping teaspoons onto prepared backing sheets. Bake one sheet at a hime for 12-15 minutes, or until golden brown.
Remove from oven and let cool for 5 minutes before transferring to wire rack.
